Red Beans and Rice with Pork Kielbasa



This is yummy dish. So full of spices and herbs and filling, espicially if made with all organic ingredients. Applegate makes a great organic pork kielbasa. This is also a one-pot meal if you don't count the rice cooker.

Note: Spice measurements are by preference and potency of spices will vary depending on the brand. Adjust spices to taste for the first time preparing.

  • 2 cans of kidney beans
  • 2 pork kielbasa, sliced
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 cup long grain rice (white rice)
  • 1/2 cup chicken broth
  • 1/4 tsp cayenne pepper
  • 1/4 tsp basil
  • 1/8 tsp oregano
  • 1/8 tsp red pepper flakes

Cook rice, mean while begin pan frying sausage and bell peppers in oil, add onions shortly after. After about 4 minutes, add kidney beans and chicken broth, salt and spices. Cook uncovered for 10-15 minutes or until broth and liquids have reduced sufficiently.

Serve with Tabasco Sauce!

Steamed Cabbage with Pork Kielbasa




Be sure to not fry or saute any of the cabbage. It must not get hot enough to actually burn or crisp. Cabbage just does not taste good like that, so use a lid and a low medium heat while checking on it and stirring. Be sure to not add any more than a tiny amount of celery seed.

1/2 head of shaved cabbage
2 pork kielbasi, sliced into circles
pinch of celery seed
canola oil

Cook sausage in oil until slightly warm, add shaved cabbaged. Season with salt, pepper and a tiny amount of celery seed. Let cook until cabbage is very well soft soft.

Pan Fried Tofu with Spiced Yogurt




This dish is incredibly delicious and so fast to make. It is high in protein which is great, and also a good choice if you need a soft food. The original recipe can be found from StoneSoup's a FREE e-cookbook [5 ingredients | 10 minutes]. This cookbook is very good for quick meals, just amazing.

400g (14oz) firm tofu
2t ground cumin
2t garam marsala
1C natural yoghurt

Cut tofu into slices about 6mm (1/4 inch) thick and pat dry with paper towel.

Heat a large frying pan on medium high and add a few tablespoons peanut or olive oil. Cook tofu until brown and crisp on both sides.

Meanwhile combine yoghurt and spices and season well with salt & pepper.

Black Beans and Rice


With food prices rising so quickly, I am reviewing my frugal recipe options. I discovered a nice hidden stash of personal beans and rice recipes. This one in particular was modified into a quicker to make (and cheaper) version. This could easily be a cheap organic dish as well.





2 cans of black beans
1 small yellow onion
1 cup brown rice (uncooked)
1 lime
Cayenne pepper
Cheddar cheese
Sour cream
Tabasco sauce

Cook rice. Dice onion, then pan fry in tiny layer of oil. Once cooked, add black beans, then simply bring to desired temperature. Add salt and cayenne pepper to taste. Serve with cheese melted on, a dallop of sour cream, quarter lime wedges and tabasco sauce.

First Post

I strongly urge anyone who has a skill, talent or trade to start a bloging on that subject. There are surely things in your hobby which you need to write down for reference. A great way to write this all down is in such a way that others can see your notes as well. Whether it be a colleague, friend or just anyone who may benefit from shared knowledge (just as your tips and tricks you learned along the way came from such useful resources).

With this blogging and sharing manifesto in mind, I have created this blog for simple recipes which I personally use. This blog itself will be my own cookbook which I will refer to.
